ABOUT THE CHOCOLATE: In 2019, we hitched a ride to Colombia with our friend and coffee producer Chalo Fernandez. He is one of the leading specialty coffee producers near Huila. Chalo brought us to a technical college in Neiva, and we were introduced to the cacao specialist. Without much talking, we were handed pure, 100% chocolate samples to evaluate. They were sweet and nutty, reminding us of toasted hazelnut. Needless to say we were blown away with how delicious pure chocolate could taste!
This bar is our attempt to recreate that very experience and share it with you. We are pushing the boundaries of fermentation at our tiny roastery and cafe - allowing us to alter flavour and texture on a more rapid basis.
TASTES LIKE: Intense. Picture under ripe strawberries. It finishes slightly dry, reminding us of over steeped tea. The texture is remarkable - buttery, creamy, delicious. A little nibble goes a long way!
