These brownies are delicious. But you cant take my word for it, you need to make them and see for yourself! We spent a lot of time figuring out how to make a brownie that is chewy & fudgey with a slight crisp around the edges. I can say it was time well spent.
First things first - find yourself some quality goods. It's hard to make great desserts without great ingredients, so find your local source and trust it will make all the difference.

Ingredients

1 cup + 1 tbsp (227g) unsalted butter

4 large farm fresh eggs

2 1/4 tsp (9g) pure vanilla extract

1 1/4 cup (246g) cane sugar

1 1/4 cup (176g) coconut sugar

1 cup + 2 tbsp (184g) fresh milled flour

1 1/4 cup (92g) natural cocoa powder
-
1 cup + 3 tbsp (168g) finely ground chocolate

1/2 tsp (2g) finely ground coffee
-
3/4 tsp (3g) sea salt

Directions
Turn on the oven to 350°F. Adjust rack to the middle position.
Place butter in a small saucepan and turn on medium/low heat. Once melted, turn off and allow to cool slightly, making sure it does not solidify.
With a little knob of butter, coat the inside of the baking pan.
Pour dry ingredients into a medium mixing bowl. Briefly whisk to ensure the ingredients are evenly distributed.
Make a well in the centre and crack eggs. Whisk the eggs and then add vanilla and cooled butter. Whisk until combined.
Use a spatula to fold the dry ingredients into the well until it is just combined with the wet ingredients.
Spread evenly into the prepared pan and bake for 25 minutes.
Gently shake the pan to see if the centre is set. Insert a toothpick in the centre, if it comes out clean the brownies are done.
Let brownies cool for at least 15 minutes before cutting through.
Recipe Note
- Do not over mix the batter.
- Depending on your oven, these brownies may need a little more or less time. Keep an eye in the final few minutes and adjust as necessary.
- Test for doneness by gently shaking the pan side to side. If the middle looks soupy, bake for a couple more minutes.
- Keep in mind these brownies will continue to firm up after they are removed from the oven.Let these cool for at least 15 minutes before cutting through.
